Zucchini Slice

Makes 1 Tray - 26 x 20cm


Ingredients

1 Large Zucchini

1/4 Brown Onion

2 Slices of Ham or Shortcut Bacon - (around 40g)

2 Slices of Cheese - Tasty/Colby/Provolone - (around 40g)

1/2 Cup SR Flour (or 1/2 cup Plain Flour + 1 tsp Baking Powder)

3 Large Eggs

2 tbsp Oil

Salt


Method

Preheat your oven to 210°c.


Grate your zucchini and onion and use your hands to squeeze out the excess water then add them to a bowl.


Chop your ham and cheese and add them as well as the flour, oil, eggs and a sprinkle of salt - about a teaspoon.


Give everything a mix and once smooth and combined pour it into your lined tray.


Bake till set and the top turns a light golden brown - roughly about 15 - 20 minutes.


I prefer to eat mine once it's cooled down.

My Tip: These guys freeze perfectly, just place a piece of baking paper between each slice and then into a zip lock bag.
