Ingredients
Chicken Frames - get these from your butcher.
*I was able to get 6 for $2.50
1 Onion
1-2 Carrots
Salt
Olive Oil
*Celery - Optional. I don't like the taste.
Method
I used a pressure cooker but a pot on the stove works just as well and will give
your house the most warming smell.
Begin to heat your pot on the stove or turn your pressure cooker onto sear/sautee.
Trim the roots from your onion and cut it in half but leave the skin on - this will give a darker coloured broth. Roughly chop your carrots and then add a drizzle of oil into your pot and add everything in at once.
Let it brown for about 5 minutes, turning every now and again to make sure it's colour all over.
Cover with water and a sprinkle of salt and cook for as long as you have. The longer the better. If cooking in the pressure cooker you can cook for a minimum of 15 minutes.
On the stove I would recommend a minimum of 1.5 - 2hrs and only partially cover it
so it doesn't overboil out of the pot and also so it doesn't all evaporate without the lid. You can also top it up with water if needed.
Once ready strain out the bones, onion and carrot and cook in some broken pasta, pastina, fresh filled pasta or veggies and make sure you adjust the seasoning if needed.
