Ingredients
5 cups cooked – (roughly 1.5 cups uncooked) Basmati/Long grain Rice – Pre cooked and cooled 2 Spring Onions
Handful of Snow Peas 1 Zucchini 1 Carrot 1 Bunch Broccolini
Corn Kernels – Fresh or canned 1 Lime 1 tsp Sesame Oil
1 tbsp Soy Sauce Vegetable Oil 1 Egg Sriracha Hot Sauce (Adults Only) ½ Iceberg Lettuce
Method Finely cut your carrot, spring onion, snow peas, zucchini and lettuce and leave them to the side.
Chop up your broccolini and add them to your wok/pan with a little bit of water, once the water boils let them cook for a minute and drain.
Put your wok back on the heat, add a little oil and crack in the egg, you can either scramble or make it into an omelette. The egg only needs a minute and then it can go in a plate to be sliced up for later. Heat your wok again and add a little more oil. Add the spring onions and the rice, cook for a minute then add all your vegetables (except the lettuce) add a dash of soy sauce, sesame oil and salt.
If this is for the adults and you like a little heat add a generous amount of Sriracha hot sauce, cook for a few seconds more and add the lettuce and the juice of a lime, toss it through and plate. Enjoy x
