Vege-full Shepherd's Pie

Ingredients

500g Beef Mince 1 Carrot 2 Zucchini 2 Large Flat Mushrooms 1 Large Red Onion 1 Tomato (or a tsp of tomato paste) 1 Clove Of Garlic 1 Cup Frozen Peas Few Leaves Of Parsley & Basil 1-2 Cup Water (Or Stock) 1 tsp Flour S&P Evoo

1 Tbsp Worcestershire sauce

1 Tbsp Tomato Sauce (Ketchup)


Mash Topping* 5 Potatoes 1/2 Cup Full Cream Milk

1/2 Cup Sour Cream S&P



Method Preheat your oven to 250c with a top/bottom heat setting.

Peel and chop your potatoes and add them to a pot of lightly salted water, cook them till you can pierce them with a knife and it goes in without any pressure.


Drain, add the milk, sour cream and season. I just used a hand masher, but you can use a food processor, ricer, whatever you like.


I used a food processor to cut all my vegetables finely (not the peas), except the mushrooms, those I sliced, but it’s up to you.


In a deep sauce pan that can go into the oven (or you can use a pressure cooker), drizzle a little oil and add the onion, garlic and sprinkle of salt, cook till translucent then add the rest of the vegetables, and cook for a few minutes till everything softens.


Next add the meat with a sprinkling of salt and pepper, Worcestershire sauce and the herbs, let it cook for another few minutes, till everything starts to brown. Then add in a tbsp of flour and stir it through.


If cooking in a pressure cooker add 1 cup of water or stock, close the lid and cook for 10 minutes.

If your cooking on the stove add 2 cups of liquid, cover, but stir every so often and cook for about 20 mins, you want the meat to be really soft, so the longer you cook it the more tender it will be.


The finished mixture should still be quite wet - it'll thicken in the oven.


Check for seasoning, add a few more fresh herbs, the tomato sauce and scoop the meat into your oven dish, top with the mash and a drizzle of oil, this will help the mash brown. Cook till the mash browns, about 15 minutes, if it’s still not browning just turn on your grill but watch it like a hawk! Enjoy x


My Tip: Make cauli mash for a LC/Keto option. Feel free to swap veggies around but don't be afraid to serve this dish to picky eaters. Because the veg is being minced in the food processor they wont even know!


To make the sauteed peas I add some olive oil, onion and the frozen peas to a pan. After the onion has begun to soften add in about 1/4 - 1/2 cup of water and a sprinkle of salt and pepper. Let them cook till the water evaporates and the onion has become soft and sweet - about 10 minutes.
