Spinach + Ricotta Crepe Cannelloni

Ingredients

12 Crepes 750g Ricotta Cheese 1/2 Cup Freshly Grated Parmasen 1 Egg 300g Bag Of Baby Spinach (I wilted it in a little Olive Oil in a pan) S+P

800ml Cooked tomato sauce (napoli)


Method

Preheat your oven to 250c


Mix all the ingredients in a bowl.


Add a layer of tomato sauce to your baking dish.

Spoon the filling onto your crepes and roll them up, place them in a baking dish and cover them with more sauce, a few leaves of fresh basil and a generous grating of Parmesan.


Put them into the oven, uncovered, for about 15-20 minutes.
