Makes 30 Meatballs
Ingredients
1kg Beef Mince
1 Carrot (optional)
1/4 - 1/2 clove of Garlic
1/3 - 1/2 cup of Parmesan
1 cup Breadcrumbs
2 Eggs
Small handful of Parsley
Salt
EV Olive Oil
400 - 500g Tomato Passata or tinned Crushed Tomatoes
Fresh Basil
For the Subs
Bread Rolls
Provolone Dolce Cheese
Method
There are two ways to make this dish, one is fully on the stove top and the other is to finish cooking it a bit slower in the oven - you can choose.
Preheat your oven to 230°c.
Grate the carrot, parmesan and garlic and add it to a mixing bowl with the beef, breadcrumbs, eggs, about 2 tsp of salt and some chopped up parsley.
Use your hands to mix everything together till it's all fully combined.
Roll them into balls - I got 30 balls out of mine which were about the size of a golf ball.
Heat a deep frying pan that can also go into the oven, drizzle in some oil and brown off the meatballs for a few minutes on each side.
Once they've browned pour in your sauce as well as half the tin/bottle of water and rip in some fresh basil leaves, sprinkle in a little bit of salt - aiming for the sauce and give it all a mix.
Bring your sauce to a simmer and then put it in the oven for 25 - 30 minutes giving it a stir half way, or continue to cook it on the stove for about 15 - 20 minutes.
You can serve as is with some crusty bread, stir through some pasta or fill a baguette with meatballs, top with some sauce and a few slices of provolone and grill it in the oven till the cheese melts.
