Ingredients
1 Bunch Of Tuscan Kale (Fibrous Stalks Removed) 2 Potatoes (Peeled) 1 Red Onion 1 Smoked Pork Rib (Bone Removed, You Could Also Use Bacon) 1 Cup Of Chicken Stock (Optional) 1/4 Clove Of Garlic (Optional) Basil + Parlsey (Few Leaves) Water (About 1 Litre) Olive Oil Method
Roughly chop everything up and add it to a saucepan with olive oil.
Sautee it for a few minutes, sprinkle with s+p, add the stock and enough water to generously cover everything.
Cook everything on high till it starts to boil, then reduce to a medium heat and cover with a lid.
Keep an eye on the water level and stir every so often to make sure nothings sticking to the bottom.
Once the potatoes can be easily mashed with the back of a spoon, about 25ish minutes, blend everything with a stick blender. Check for seasoning and if you want the soup to be thinner add more water, or thicker you can just cook it for longer. To serve I add a spoon of sour cream and a grating of fresh Parmesan to each bowl. Enjoy x
