Salsicce + Greens

Ingredients

8 Italian Pork + Fennel Sausages 1 Bunch of boiled Broccoli Rape 2 long sweet peppers green or red sliced 1 red onion sliced 1/4 cup white wine Fresh Rosemary Olive oil

Method Use a pan big enough to fit everything in. Cut your sausages up in 3cm pieces and add them to your pan with the rosemary, cook them for a few minutes till they begin to colour. You shouldn't need any oil as the fat of the sausages should begin to melt into the pan. If your sausages are lean then you can add a drizzle of oil. After a few minutes add the onion, cook for another minute and add then the peppers and a sprinkle of salt. Make sure your mixing them around so they dont stick and burn. Once the sausages are browned and cooked through and the onions and peppers have softened and caramelized add in the wine. The wine will remove any caramelized bits stuck on the bottom of the pan. Cook for a further minute to remove the alcohol then add in the rape. Mix till fully combined and heated through. Serve with some crusty bread.
