Potato + Leek Soup


Ingredients 1 leek sliced 2 celery stalks sliced 3 large potatoes - peeled and quartered 500 ml water

Salt & Pepper EVOO Basil



Method I used my pressure cooker, but you can easily make this on the stove.


In a pot (or pressure cooker) add a drizzle of olive oil, the leeks, celery, a few leaves of basil and a sprinkle of salt.


Cook for a few minutes till they soften, then add the potatoes and some black pepper and cook for another few minutes.


Add your water and a little more salt, cover and cook for about 20 minutes, (in a pressure cooker, set to low pressure for 15 minutes) the soup is ready when you can press the potatoes against the side of the pot and they can easily mash.


Add a few more leaves of basil and use your stick blender to blend it directly in the pot.

Check for seasoning and serve.

My Tip: For little kids who feed themselves add a handful of bread in their soup and blend it again, the bread will make it a thicker texture and easier for them to eat.
