Ingredients
500g Spaghettini
1 tub of fresh Ricotta (about 400g)
Parmesan
Nutmeg
S + P
Method
Put a pot of water on the stove to boil, then generously salt it and add in your spaghettini.
Spaghettini only take around 4-5 minutes to cook, drain them when they're al dente and reserve about a cup of cooking water.
Add the pasta straight back into the pot and mix in your ricotta, a good handful of fresh Parmesan, a fine grating of nutmeg and some freshly cracked black pepper.
Combine everything together and if you feel like you want the sauce to be a bit more wet you can add in some of the cooking water.
Serve it up and of course add some extra Parmesan on top.
