Ingredients
500g Rigatoni (or another short pasta)
Bolognese Sauce (Click for Recipe)
200g Fresh Bocconcini
150g Scarmoza (or Mozzarella, Stracchino)
Handful of Parmesan
Method
Preheat your oven to 250°c.
Boil a pot of salted water and cook your pasta for a few minutes before your packet says, so it's quite al dente.
Drain your pasta and put it back in the pot, mix in the sauce and cheeses. you can use some of the bocconcini but I like to tear them on top fresh and let them melt naturally from the heat of the pasta.
Once it's combined add it to a tray and then into the oven. You can cook it just till the cheeses have melted or you can take it as far as getting a crispy top layer, that's my favourite, it'll take about 15 - 20 minutes.
Add your torn fresh bocconcini and serve.
