Ingredients
500g beef mince 1 carrot 3 small white Zucchini or 1 large green 1 red onion Small handful of parsley 1/2 clove of garlic 1/2 - 1 sweet red peppers or capsicums 1 large 2 handfuls of baby spinach 1 egg 1/2 cup cous cous 1/4 cup of fresh grated parmesan 2 teaspoons salt 1/2 teaspoon black pepper
Method
Preheat your oven to 250c.
Add all your vegetables into a food processor and pulse till they are in small pieces, add the meat, egg, parmesan and s&p and pulse till everything's combined.
I then removed the blade and added the cous cous and mixed with my hands, you can do it with the blade if you like as the cous cous is very small already they shouldn't break down much more.
In a lined baking tray drizzle some olive oil and add in your mixture, then cover with foil and put into the oven.
It should only take about 25 minutes to cook. For a crisp brown topping, remove your foil once it's ready, drizzle it with a little bit of oil and put it under the grill for a few minutes. Enjoy x
My Tip: You can use breadcrumbs instead of cous cous.
