Homemade Ricotta in 10 Minutes

Makes - About 250g 2 litres full cream milk (8 cups) 60ml (4 Tbsp) white vinegar 1 Tsp Salt Pour the milk into a saucepan and add the salt, heat to 87°c (190°f) or until the milk froths and it just begins to simmer. Turn off the heat and pour in your vinegar, give it a quick stir and let it sit for 5 minutes. Strain into a small holed colander or cheese cloth. Let it drain for about 5 minutes and then scoop it into a container, the more it drains the drier and more crumbly it will be. Enjoy x
