Homemade Crunchwrap Supreme


Makes 4


Ingredients

500g Beef Mince

2 Tomatoes

1/4 Iceberg Lettuce

150g Cheddar Cheese

150 - 200g Sour Cream

Taco Seasoning - 1 Tbsp

1/2 Onion

Few handfuls of Corn Chips

Sriracha Sauce - Optional

Olive Oil

Lime

Salt


5 Coles Flip and Fold Flour Burrito Wraps

(Can use LC wraps too)



Method

Chop up the onion and add it to hot non stick frying pan. Add in a drizzle of olive oil, the beef mince, a good sprinkle of salt and the taco seasoning. Break up the meat with your spatula and let it brown and cook through.


While the meat's cooking you can get the rest of your fillings ready. I dice the tomatoes and shred the lettuce. You can grate the cheese or finely slice it. I add about half a tomato to the meat, but this is optional.


For the sour cream, I spike mine with a good squeeze of sriracha sauce and lime juice, it's not that spicy but it just gives a little bit of extra flavour. This step is totally optional, you can leave the sour cream plain.


Before we begin to put the wraps together, cut one of your tortillas into quarters, he'll act as our lid.


The meat will be done by now, transfer it to a bowl and give the pan a quick wipe and put it back on the stove on a low heat.


Time to assemble the wraps.


Place a tortilla down, scoop some of the sour cream and spread it all over, especially to the edges, this will act as the glue. I like to put a little bit extra in the middle too.


Begin to layer with the cheese then the meat, divide it between the 4 wraps, remember to work in the centre of the tortilla as we are going to the fold in the sides at the end.


Next a layer of tortilla chips, the tomatoes and the lettuce.


To fold it up, place a piece of the cut up tortilla on top of the lettuce then fold in the sides, you should be making 5 folds, it'll look like a star, the sour cream will help it stick together.


Carefully put it on the heated pan, folded side down and let it cook for about a minute. It will become toasted and brown, flip it and cook for another minute till brown on both sides. I place a small plate on top to keep it pushed down and to also help me flip it.


Serve immediately.
