Ingredients
500g of white skinless Fish (I used snapper) 200g of raw prawns 1 stalk of spring onion A few stalks of chives 1 TBSP Fresh Parsley 2 small Zucchini 1/4 clove of garlic S+P EVOO
Method
Finely grate (using the smaller side of your box grater) your zucchini or use your food processor.
Put the zucchini in some kitchen paper and squeeze all the excess water out.
In a food processor add your fish and blitz till you have fine chunks. Then add in the prawns, parsley, chives, garlic, torn up spring onion + seasonings.
Pulse for a further few more seconds to combine everything together. I like my prawns chunky but you can blitz it for longer if you want a smoother mixture.
I remove the blade of my mixer and stir in the zucchini with a spoon, but you can add everything to a bowl if you prefer.
Once your mixture is all combined it's time to make your patties. I find a spoon helps as the mixture is quite sticky.
Add a drizzle of EVOO to a heated nonstick pan and add in your patties.
When they're golden brown it's time to turn them, about 3-4 minutes on the first and 1-2 on the other.
For a tasty dipping sauce - mix together some mayo, lemon, chopped up gherkins/pickles and chives. If you like a little kick add in some Sriracha!
