Makes 8-10 Patties
Ingredients
1kg of White Fish - I used Dory + Rockling
Small Handful of Chives or Spring Onion
1 Egg
2 tbsp Plain Flour
Salt
Pepper
EVOO
Method
In a food processor add the fish and chives and blend till you get a texture that's sticky enough to hold it's shape but stil has litttle chunks. Don't let it turn to a paste.
Add it to a bowl with the egg, flour and s+p and mix till combined.
Use your hands to mould the mixture into patties and fry them in a pan for a few minutes on each side, till they're golden brown.
Serve them in a bun with some homemade pickled onion + cukes, spiked mayo and lots of lettuce.
My Tip: For a quick spiked mayo, in a jar add - Mayo, lemon juice, salt, pepper, sriracha, paprika and a few cut up gherkins.
To make the pickles slice your onions and cucumbers and put them in separate bowls. In a little saucepan make a quick pickling liquid - just heat 1/2 cup of White Vinegar, 1/3 cup water, sprinkle of salt and about 1/2 tsp of sugar. Once it has cooled down a bit, but still warm pour it over your veg, give them a mix and put them in the fridge to cool till you're ready to use them. If they're not sour enough for you, you can add some extra vinegar.
