My version of a sophisticated easy as poached egg, that you can't fail making and comes with an awesome sauce.
Ingredients
Eggs
Parsley
Garlic clove (whole but squashed)
S+P
EV Olive Oil
Water
Method
In a pan add a little oil and some garlic and parsley, cook on low for a minute and add a little water, about 1/4 of a cup.
Then crack your eggs and sprinkle with salt and pepper, cook covered for a few minutes.
I usually tilt the pan and keep basting them with the juices.
Cook till your happy, I like mine to have a set white but a really runny yolk.
Serve with a crusty piece of bread to dip up all the amazing juices!
