Creamy Potato + Onion Gratin



Ingredients

4 Potatoes 1 Onion Fresh Thyme Parsley Salt & Pepper 1/3 cup Cream

1/2 cup Water Olive Oil 3/4 cup Fresh Parmesan



Method Preheat your oven to 200c. Peel and thinly slice your potatoes, make sure they're all the same thickness as you want them to cook at the same time. To make it easier and faster I use a mandolin.


Slice your onions and add them to a bowl with the potatoes, sprinkle with salt and plenty of pepper, the cream, water, some thyme, parsley and a good grating of fresh Parmesan.


Mix everything together with your hands, making sure you separate the potato slices. Add them to a baking tray with a tiny drizzle of olive oil on the base, spread them out and shake the tray a little to let everything settle. Cover with foil and into the oven, after 30 minutes check the potatoes are cooked by using a toothpick or knife, it should easily go through all the layers and come out smoothly.


Add another grating of Parmesan and put it back in the oven for 10 minutes uncovered until golden brown.


You can also change the oven setting to grill and save yourself some time.

My Tip: You can substitute the cream for sour cream, Philadelphia, a little milk or nothing at all. If you use nothing add a little oil to the mix.
