Creamy Cauliflower, Chicken and Bacon Soup

Ingredients

1 Cauliflower

4 Tbsp Ghee*, Butter Or EV Olive Oil 2 Tbsp Mct Oil* (Keto Only)

100g Bacon ½ an Onion 2 Spring Onion 2 Tbsp Pure Cream 50 - 100g Cheddar Cheese 200g Chicken 3 Cups Chicken Stock S+P


Method Dice all your ingredients. Heat half a tbsp of ghee in a saucepan and add half the bacon, chicken, half the spring onion and a sprinkle of salt. Cook until the chicken is done and put it in a bowl for later. Now add the remaining ghee, onion, spring onion and a sprinkle of salt and cook till it softens. Add the bacon cauliflower and cook for a few minutes to brown. Add the stock and let it boil for about 10 minutes till the cauliflower has fully cooked, then add the MCT oil and use a hand blender to blend it all. Add half the cheese and the cream and cook till the cheese has melted. Add the chicken and bacon and check for seasoning. Add the soup to bowls a little more cheese and a fresh sprinkle of spring onion and black pepper. Enjoy


My Tip: The ghee and MCT oil are used for keto, you can add as much as you need.
