Feeds 4 - 6
Ingredients
1 Rabbit cut up into about 6 pieces OR
4 Chicken Marylands (or boned pieces of your choice)
4 small Italian Sausages (you can use pancetta if you prefer)
2 stalks of celery
1 Onion
1 clove of Garlic
2 Carrots
2 Dried Bay leaves
1/2 cup white wine
Handful of Olives
1 400g tin of Crushed Tomatoes
EVOO
S + P
2 tbsp flour
Method
Finely chop your vegetables, crush your garlic and add them to a shallow saucepan with a sprinkle of salt and the bay leaves. Saute them for a few minutes till they get a little bit of colour.
Lightly flour your rabbit/chicken and add the pieces to your pan with a sprinkle of salt. Cook them for a few minutes on each side till they brown. Then add the wine and cook it till it partly evaporates, then add the tomato and enough water to cover all the pieces. cover with a lid and simmer on low for 1 hour, stirring from time to time.
When there's about 10 minutes to go it's time to check how the sauce is looking. if its too wet, remove the lid and continue cooking till you're happy with it. if it's too thick then add a little bit of water and keep the lid on. Add in your olives at this point.
Check for seasoning and add some fresh chopped up celery leaves,
You can serve this as is with some crusty bread or with pasta, like Parpadelle or Gnocchi. Rice or mashed potato would be great too.
