Ingredients
1 1/2 Cups Dried Cous Cous
500g Mince Beef
1 Carrot
1 Red Sweet Pepper
1/2 Fresh Onion
2 Spring Onions
1 Tsp Ground Cumin
1 Tsp Ground Coriander
S&P
1/2 Lime
Olive Oil
Method Cook your cous cous according to packet directions, but add a little oil and a pinch of salt in your water. Once ready leave to the side.
Grate your carrot and finely slice onions and pepper. Add a little oil to your pan, add your onions and a pinch of salt and cook till soft, then add your peppers and carrots cook for a minute. Add your spices and your meat.
Cook till ready and add your cous cous, mix and add the lime juice. Check for seasoning.
Enjoy
My Tip: Serve with some plain yoghurt or labne.
