Beef Stew with Mash x Sauteed Peas

Ingredients

700g Beef Chuck (or another stewing cut)

1/2 Onion

1 - 2 Carrots

2 Garlic cloves

180ml White Wine (Red is fine too)

800 - 1L of Homemade Stock

90g of Tomato Paste

Salt

Pepper

About 2 Tablespoons of Flour



Method

I made this recipe in my pressure cooker but it can also be made on the stove or in the oven.


Turn your pressure cooker onto sear/sautee mode and let it heat up.

Stove/oven method - Heat your pot, something like a cast iron pot with a lid will work best.


Meanwhile dice up your meat and remove any large chunks of fat but don't be too picky. Sprinkle over some salt, pepper and flour and coat all the pieces.


Add a generous drizzle of olive oil to your hot pot and add in the meat. Spread out the pieces and let them brown up, the longer your resist to touch them the better.


Once they've coloured on all sides chop your onion, garlic and carrots and them in too with another sprinkle of salt.


Let them cook for a few minutes till the onion has become translucent and in the tomato paste and cook that for another minute.


Next pour in the wine and use your wooden spoon to scrap away any sticky bits on the bottom of the pot, this is extra flavour. Let the alcohol cook away for a minute and then add in about 800ml of your stock. (Stove/oven method - about 1L as it will reduce faster)

If your stock is unsalted you can add in a sprinkle of salt but not too much as the gravy will reduce and become saltier as it cooks.


Cover with a lid and cook for 45 minutes on High Pressure. Once it's ready cook it for a further 5 minutes on sear mode again to let it reduce a little and check for seasoning.


Stove method - Cover and cook on a low simmer for about 2 hours, giving it a stir every 40 minutes or so. If you need to add extra stock feel free to.


Oven - Cover and cook in the oven at 170c for about 2 - 2.5 hours. Give it a check at around 1 hour to make sure there is still enough liquid.


Serve with Potato Mash and Sauteed Peas - which is made with just a tiny bit of onion in a pan, some olive oil, salt, pepper, frozen baby peas and a drizzle of water. Cook till the peas are just cooked through.
