Serves 4 - 6
Ingredients
2 Scotch Fillet Steaks (500g) - or beef of your choice.
1 - 2 Broccoli
1 small bunch Chinese Broccoli
1/4 Red onion
1 Spring onion
1 tsp grated Ginger
1/2 clove of crushed Garlic
2 tbsp Oyster Sauce
1 tsp Soy Sauce
1 tsp Sesame Oil
1 heaped tsp Cornflour
Grapeseed Oil
Method
Cut your broccoli into small florets, the Chinese broccoli into threes and finely slice your onion and spring onion.
Slice your meat into thin strips, if your finding it hard to get them really thin you can cut them and use a meat mallet to help flatten them out.
Put them in a bowl with a sprinkle of salt, cornflour, red onion, sesame oil, garlic and ginger. Mix till the meat is all coated.
Heat a little bit of water in your wok and once it starts to boil add in all your broccoli, mix them around and cook them for a minute, you just want blanch them. Drain them and the water.
Put your wok back on the heat and let it get very hot, about 1-2 minutes, you'll begin to see smoke.
Pour in a little bit of grapeseed oil and and add in the meat. Give it a quick mix and spread it to the sides of the wok, that's the hottest part.
Let them cook for about a minute without turning and they should have a nice brown coating, give it one mix and add in the broccoli and spring onion and toss everything around.
Next add in your soy, oyster sauce a sprinkle of salt and about 1/4 of a cup of water (if you want it saucy). Cook it all for a further minute and it's done.
