Makes 18 - 20
Ingredients
500 - 600g Beef Mince (You can use full/half Lamb)
1/2 an Onion
1/2 clove of Garlic
3 Tbsp Fine Burghul
2 tsp Mingle All Purpose Seasoning (This has a mix of paprika, cumin, coriander etc)
Handful of Parsley
Few Sprigs of Coriander
1 tsp Salt
Pepper
Method
You can either add your ingredients into a food processor till it's all come together and smooth or you can finely chop/grate and mix everything together in a bowl.
Cover and refrigerate the mix till you're ready to cook, this allows the burghul to swell up and will help when rolling out your kofte. I roll mine into a flattish sausage because I usually then wrap them in Pita, plus they cook quicker.
You can choose whether you pan fry them or grill them on the bbq - either way they'll be delicious.
Serve with fresh pita, tzatziki and my favourite fattoush salad!
