Ingredients
2 Eggs
1/2 tsp Vanilla Extract
1 tbsp Maple Syrup
1/2 cup Raw Sugar
2 tsp Cinnamon
Pinch of Salt
5 Bananas - 4 for Mixture + 1 for Topping
50g melted Butter
2 cups Self Raising Flour
1/2 cup Natural Yoghurt
Method Preheat your oven to 190c and grease a tin of your choice. This time I made a small loaf and 7 muffin tops. In a bowl (I used my stand mixer) beat your eggs, sugar, vanilla, maple syrup, salt and cinnamon till the mixture has, doubled and become pale and fluffy. About 5 minutes. Mash your banana, I use a fork, and add it to the bowl as well as the yoghurt, flour and butter. Use a spatula to gently combine the mixture together trying not to remove all the air we made earlier. Fill your tin and place the last banana, cut in half length ways on top. Sprinkle with a little raw sugar and a few dots of butter, this will make it extra brown and glossy! Place it into the oven and cook for 45 minutes (if you're making muffins 15-20 should be enough). Keep an eye on it, once it starts to brown, around 35 minutes in, check on it. Use a bamboo skewer to check that the inside is cooked through, the skewer should come out clean. Enjoy x
My Tip: Want to make it even better? You can add some sultanas, nuts, even grate an apple. By adding the apple you can remove some of the sugar.
