Baked Figs + Peaches with a Nut Crumb


Ingredients Peaches cut in half and de-stoned Figs cut in half Nut Crumb

A little handful of each Almonds Macadamias Walnuts Brazil nuts

Maple syrup Brown sugar Orange zest

Method The nut crumble needs to fully cool to serve so if you want to serve your fruit straight out of the oven make sure you make the nuts earlier. Preheat your oven to 250c.

For the nuts - put them in a bag and bash them with a rolling pin. Don't make them too fine, different sizes are fine. Sprinkle them with some sugar, I used brown sugar, about a level tablespoon. Add the same of maple syrup, and a sprinkle of orange zest. Mix them together with your hands and then onto your lined tray.

Place all your fruit on another lined tray with the cut sides up, sprinkle them with a little sugar on each, I used raw sugar but any would be fine. Put all the trays in the oven, the nuts should take about 15 minutes, keep an eye on them that they don't burn and with a spoon mix them around about halfway through. Remove them from the oven once they are dark brown, but not burnt! The fruit doesn't need to be turned, just watch they don't burn, the figs should take about 10-15 minutes and the peaches 25-30. When I removed the peaches from the oven I turned them flat side down and left them like that till I was ready to serve.


Serve the fruit with some of crunchy nut crumb and a good vanilla ice cream. Enjoy x
