5 Minute Spring Salad


Ingredients

1 Bunch of Asparagus

1/4 Red Onion

1 Tbsp Dried Currants

50g Feta Cheese (Not Australian, you want something creamy)

1 250g packet of Aldi Super Grains Rice Blend (Brown Rice, Legumes, Grains and Seeds)

Olives

1/2 Lemon

1 Tbsp Red Wine Vinegar

Olive Oil

Salt


Method

Cut your asparagus and add them to a bowl as well as the rice.


Microwave them for 90 seconds.


Drizzle over some Olive Oil, Lemon, Vinegar and a sprinkle of salt, not too much as we're adding feta.


Thinly slice your onion and give it a rinse under water to remove the pungency, add it to the salad as well as adding the olives, currants and crumbling in the feta.


Give everything a good mix, then taste and adjust the seasoning/dressing if needed.


Serve at room temperature.

My Tip: If you don't use this exact rice sachet or want to boil your own, don't use white rice. You want to use a brown, grains, wild rice as they are a little more chewy.
