1kg Chicken Ribs
1/3 cup White Wine
1-2 Garlic Cloves
Rosemary (I use fresh)
1 heaped tsp Paprika
EV Olive Oil
Salt + Pepper
Lemon
Method
Heat a pan and drizzle in some olive oil and the chicken. Crush in the Garlic, a small handful of Rosemary, Paprika and and a good seasoning of S + P.
Give everything a stir and let them cook till they've nicely browned all over.
Once they're almost ready pour in the wine, this will help lift any sticky caramelised bits on the base of the pan, cook the wine off for a few minutes.
They should take between 12 - 14 minutes from start to finish.
To know if they're ready - pull a bit of meat off the bone, it should be white.
Finish with a squeeze of lemon.
