Serves 4
Ingredients
4 Skinless Salmon fillets
500g Green Beans
300ml Cream
1 clove of Garlic crushed
1 tbsp + extra for garnish finely chopped Chives (dried is ok too)
1/2 tbsp + extra for garnish finely chopped Dill (dried is ok too)
2 tsp Grain Mustard
1/3 cup White Wine
EVOO

Method
Grab a pan that is big enough to hold the salmon and beans and put it on your stove to heat up. Once it's really hot add a drizzle of olive oil and put the Salmon in, flesh side down on the pan (not the side that the skin was on).
Sprinkle it with a little bit of salt and let it cook for a about 3 - 4 minutes till it's nice and brown. Then give it a turn and let it cook for about 1 minute on the other side and remove it from the pan.
Turn the heat down a little, there should still be some oil in the pan but if there's not just drizzle a tiny bit more and add in your garlic and 1 tsp of mustard, give it about 10 seconds to cook and add in your wine.
The wine will remove any bits that are stuck on the base of the pan, just use your utensil to help it along!
Let the wine cook for about 30 seconds and add in the other tsp of mustard, the herbs, cream, a sprinkle of salt and good cracke of black pepper, give it a mix and let it begin to simmer.
Taste the sauce to make sure you're happy with the seasoning.
Make sure the sauce just has a low simmer otherwise the sauce will dry up by the end.
Now add in your beans and give them a stir, cover your pan with a lid and let them cook for about 2 minutes. (You can also boil them in a separate pot and serve them on the side if you prefer)
They should be nice and crunchy at this stage.
Move the beans around so you can make a few bare spots for your Salmon to sit in the sauce.
Add the Salmon back in, browned flesh side up, cover the pan again and cook for about 2-3 minutes. By this stage your fish should be perfectly cooked, obviously this will also depend on how you like your salmon cooked and the size of your fillets too.
Sprinkle with a few more fresh herbs and serve as is or with some extra sides like mash (potato or cauli), rice (cauli rice), pasta (zucchini noodles) etc.

My Tip: The best thing about this dish is that you can substitute the salmon for any other protein, chicken. prawns, tofu, beef etc and it will still work perfectly!
