Makes 18 - using a patty dome pan
Ingredients
2 Sheets of Pre Rolled Puff Pastry 1/2 cup of vegetables {make sure you use onion!}
Onion Asparagus Sweet potato Zucchini Basil Olive oil 185g Tin of tuna in olive oil. 3 cherry tomatoes or 1/2 a full sized
Feta Cheese Ingredients
Preheat your oven to 200c/390f on intensive bake setting, if you don’t have this setting you may need to cook them a little longer. Lightly oil the pan and cut your puff pastry into rounds, place them in the patty pan. Finely chop your vegetables, basil & tomatoes (you can use a food processor) and add them to a frying pan with a little olive oil.
Cook on medium for roughly 10 minutes till cooked, add a pinch of salt as it will soften the onions without burning them. You can also add a little water to help cook everything faster. Once the vegetables are cooked add the tuna and 1/4 cup of water, cook for another minute,
till the water reduces a bit. Remove from the heat and let it cool.
I split the filling in 3 and to 1 of the mixtures I added a little feta cheese, to another I added finely sliced gherkins and the third I left plain.
Spoon the mixture into the pastry and into the oven for 10-15 minutes, mine took 13. Remember the mixture is cooked so all were cooking is the pastry.
