Ingredients
Tomato
Red Onion
EV Olive Oil
Fresh Basil
Bread Loaf - Can be day old
Garlic
Salt
Method
Turn on your oven griller, sandwich press or toaster.
Slice your bread, about 1 cm thick and grill them till golden brown.
Dice your Tomatoes and put them in a bowl.
Finely dice the onion and add them to the bowl too with some torn up Basil, Oil and a sprinkle of Salt. Mix together.
Your bread should be ready, cut a clove of Garlic in half and rub the pieces of bread with it. The more you rub the stronger the garlic flavour.
Spoon on your Tomato mixture, add a little more basil on top and serve.

My Tip: Drizzle some Balsamic Vinegar for an extra punch of flavour or tear on some fresh Buffalo Mozzarella.
