Ingredients
4 large Portobello Mushrooms
Old Ciabatta Loaf - about 30g
Halloumi - 50g
Persian Feta (or any Feta) - 40g
1/4 - 1/2 clove of Garlic
A sprig of Thyme
Few Leaves of Basil
Drizzle of EV Olive Oil
Sprinkle of Salt
Method
Preheat your air fryer or oven to it's highest temperature. My air fryer only goes to 210c.
Add all the ingredients (except the mushrooms!) to a food processor and blitz till it becomes a fine crumb.
Remove the stem from the Mushrooms and spoon in the mixture, place the filled mushrooms on a tray and cover them with oven paper and foil. You can press down slightly on the filling to compact it a little.
I used my air fryer to cook them and after 13 minutes I removed the foil and let them brown for a couple of extra minutes.
Cooking times will be similar in your oven, but i'll make them again soon and update you.
