Makes 8-10 large crepes
Ingredients
1 cup of Plain Flour 1 cup of Milk 1/2 cup of Water Pinch of salt 2 Eggs 1/2 tbsp Butter/Coconut Oil/Oil
Method
Mix all the ingredients till smooth, using a whisk or a blender.
Drizzle a little oil on your pan and wipe the excess off with a paper towel.
Usually people tell you to pour a little of the batter in the centre of your pan and tilt it so it spreads around. But I find that doesn't give you an even circle, you're always having to add more batter to stop the octopus legs. Instead I pour it around the edge and move it around, this way it fills the centre and you're left with a perfect round crepe.
Cook for about a minute on each side, till golden.
