Roasted Vegetable Salad


Ingredients

Pumpkin Red Capsicum Red Onion Zucchini Mushroom Rocket Leaves Cooked Quinoa Lemon Olive oil S+P Fresh thyme

Feta (Optional)


Method Preheat your oven to 250c Cut your veg into smallish cubes, but don't be too fussy. Place them on a tray and mix them around with a drizzle of olive oil, s+p and some fresh thyme. Cover with foil and into the oven, cook for about 15-20 minutes covered and 10ish without, you want them to be soft and caramelized. Remove the tray from the oven and let them cool down, then add your cooked quinoa, some rocket leaves and a squeeze of lemon juice, about a quarter of a lemon. Add feta or goats cheese for extra awesomeness but this'll do just fine without it. Enjoy
