Ricotta Pancakes


Ingredients

1/2 Cup Of Milk 1/2 Cup Ricotta 1/2 Cup Of Plain Spelt Flour (Or your choice) 2 tsp Organic Agave Nectar/Maple Syrup (Or Other Sweetener) 1/2 tsp Baking Powder 1 Egg 1/2 tsp Lemon Zest 1/4 tsp Of Vanilla Extract

Coconut Oil


Method Separate your egg into 2 bowls. With a hand mixer beat the white till stiff.

To the bowl with the yolk add your milk, zest, vanilla, ricotta & agave, use the hand mixer (no need to wash the beaters) and mix till smooth.

Add your flour and baking powder and mix again till combined.

With a spoon or spatula add a little of the egg white and mix well, this will lighten the batter, then fold the rest through.

To a pan add a little coconut oil, spoon your mixture. Let it cook on medium for about 2 minutes and then flip and cook for another 1-2 minutes.

My Tip: Serve with a spiked ricotta cream or yoghurt and plenty of fresh fruit. to make the ricotta cream just whip a little vanilla, maple syrup and lemon zest together with some Ricotta.
