Quick Asian Pickled Cucumber + Carrot Salad

Ingredients Carrot Cucumber Spring onion Sesame seeds Soy sauce White vinegar Pinch of sugar & salt A few leaves of Coriander



Method Using a peeler make ribbons of carrot and cucumber, you can also use a julienne peeler. I also used the peeler for the spring onion, you won’t get perfect pieces but you just want them to be thin so they're not as harsh when you bite into a piece. To your vegetables add a splash of vinegar and soy, the salt and sugar, coriander and a sprinkling of sesame seeds.


The longer the pickle sits the better it will be, but it can also be eaten straight away.

My Tip: Instead of using the peeler you can also cut the cucumber into slices and use the same dressing.
