Choco Nut Balls



Ingredients

200g Pitted Dates 30g Desiccated Coconut 20g Walnuts 20g Almonds 20g Brazil Nuts 20g Cranberry Sprinkle (Mix of Pumpkin, Sunflower and other seeds with a few dried cranberries from Coles nut bar) 10g Cocoa 10g Coconut Oil


Method Add all the ingredients into a food processor and blitz till you reach your desired smoothness, I left mine a little chunky for texture.

Put the mixture into the fridge for 10 minutes to chill, this makes it easier to roll.

Scoop spoon fulls and press together into little balls using your hands, the smoother the mixture the easier it would be to roll.

Roll them in Desiccated coconut and store them in an airtight container in the fridge.

I let mine firm up for a few hours, but if your feeling peckish they'll definitely be ready sooner, you're really just waiting for the coconut oil to solidify.

My Tip: To weigh all the ingredients i placed my processor bowl on top of my scale and just reset the scale after each ingredient. This is much easier than using 100 bowls or spoons!
