Ingredients
1/3 cup coconut oil 1 egg
1½ cups rolled oats
¾ cup plain flour ½ teaspoon baking soda pinch of salt ¾ cup of chopped sultanas ½ cup of finely diced banana 1 tablespoon of maple syrup
Method Preheat your oven to 185°C
Beat the oil, syrup and egg well until it turns pale.
Add flour, oats, baking soda, sultanas and bananas and mix till combined - I found using a wooden spoon was better than a whisk for this part. Using a teaspoon, scoop the mixture onto a baking tray. Flatten and bake until golden brown, about 15-20 minutes.
