Ingredients
1-2 Corn Cobs 1/4 of a Pineapple (trust me!) – Fresh is best. 1 400g Mexican Can Bean Mix - Pinto, Black and Kidney 1 Cucumber 1 Tomato ¼ of a Fresh Onion Coriander Olive Oil Lime Salt
Method Cook your corn (steam, microwave, boil) and then char them and the pineapple on your bbq, or a grill plate. Cut all (not the beans!) the ingredients into small pieces and add them to a bowl. Add some lime juice, olive oil and salt. Enjoy
My Tip: Serve them in your tacos or with some grilled meat, fish or chicken. You can add some feta, grilled halloumi or brown rice. If you like a kick add in some chilli or jalapenos. Personally, I'm happy to just eat it as is!
