Mini Baked Cinnamon Donuts


Makes about 50 mini or 15 - 20 Large


Ingredients


Donuts

1 cup Milk

2 tbsp White Vinegar

1 Egg

2 tsp Vanilla

1 tbsp Melted Butter (+ 2 tbsp for basting)

1 tbsp Oil (Neutral)

3 tbsp Sugar

1/8 - 1/4 tsp Nutmeg

1/4 - 1/2 tsp Cinnamon

1/8 tsp Salt

2 cups Plain Flour

2 tsp Baking Powder

1/4 tsp Baking Soda



Cinnamon Sugar

1/3 cup Caster Sugar

1/4 tsp Cinnamon

1/8 tsp Nutmeg



Method

Stir the vinegar and milk together and let it sit for a few minutes till it curdles.


In a bowl whisk together the egg, vanilla, butter, oil, sugar, nutmeg, cinnamon and salt till combined. Once your milk is ready you can add that in too.


Mix the flour, baking powder and soda together and add it to your wet ingredients. Whisk till you get a smooth batter.


I like to add my batter to a squeeze bottle as it's easier and faster than using a spoon, I cut the tip so it has a bigger opening.


Donut Machine

Preheat your appliance for a few minutes, fill the molds to the top, close the lid and let them cook for 2 - 3 minutes till golden.


Oven

Preheat your oven to 200°c fan heat. Fill your donut trays about half way, you DONUT want to over fill or they won't come out as a ring. Cook for 7 - 9 minutes till skewer comes out clean.


Once they are cooked I like to add them to a large bowl while the rest are cooking, I cover them with cling film so they become nice and soft.


Brush melted butter on either one or both sides of the donut and dip them into the cinnamon sugar mixture.
