Makes 6 large gozleme
Ingredients
Filling
500g Minced Beef (You can use Lamb) 1 Sweet Red Pepper 1 Small Zucchini 1 Red Onion 1 Small Carrot 3 Big Handfuls Of Baby Spinach (About 70g) 1/2 Clove Of Crushed Garlic Feta Cheese ( I Used Danish Because Its Creamier, But Greek Is Fine Too) 1 Heaped Tsp Ground Coriander 1 Heaped Tsp Ground Paprika Salt & Pepper EVOO
Dough
2 cups of Plain Flour
1 cup Yoghurt
6 TBSP of EV Olive Oil
A sprinkle of salt
Method
Mix all your dough ingredients in a bowl till it comes together and use your hands to make it into a ball. then divide it into 6 smaller balls.
Use a food processor, grater or finely slice all the vegetables by hand and add to an oiled pan.
Sprinkle a little salt and cook till soft and browned, then add the meat, season again and add the spices.
You want the meat to be brown and cooked throughout. Taste it for seasoning and flavour and adjust if needed. Set it aside to cool. Sprinkle a little flour onto a piece of oven paper and roll out the dough as thin as you can.
Fill it with the meat mixture, then crumble some feta and some extra roughly chopped spinach if you like.
You want the put the filling on half of the dough and then sandwich the other half down to secure it.
Cook in a lightly oiled pan for a few minutes on each side, serve with lemon wedges and yoghurt.

My Tip: You can fill these with whatever you like, grated halloumi, spinach, feta, ham + cheese, nutella etc.
