Loaded Salad

Feeds 4 Adults


Ingredients

1 Capsicum

1 300g Can Corn Kernals

1 Cucumber

1/4 Red Onion

1 Tomato

1 Avocado

Handful of sliced/pitted Kalamata Olives

80g Feta (Dodoni Greek or a creamy Danish - Not a hard Australian one)

1 Microwavable pouch of Rice + Grains. (Brown rice, wild rice, mixed grains etc)

Small handful of Coriander/Parsley

1 Lemon

Salt

EV Olive Oil



Method

Reheat your rice following instructions on packet, then add them to your serving bowl.


To that squeeze in half a lemon, a drizzle of oil and a sprinkle of salt - while the rice cools it will absorb all the flavour.


Chop up the Capsicum, Cucumber, and Tomato as small as you like.


I like to cut the Onion very fine and run it under water to remove the harshness.


To cut the Avocado I run slits through the flesh one way and then across and use a large spoon to scoop it out.


Add everything to the bowl, as well as the drained corn, torn up herbs and crumble over the feta.


Squeeze over the remaining lemon half, and another small drizzle of oil and sprinkle of salt.


Mix everything together till combined.
