Makes 2 30cm pizza trays
Ingredients
400g "00" Flour
200g Warm Water
3g Fine Salt
60g EVOO
300 - 400g Fresh Stracciatella or Stracchino Cheese (If you can't find either blend some mozzarella with milk/buttermilk)
Method
Preheat your oven to the highest heat - mine is 250°c.
Add all the ingredients in your stand mixer bowl and attach your dough hook.
Let the dough come together and knead for about 6 minutes - on medium speed.
The dough will be very soft but smooth. Wrap it in cling film and put it in the fridge to rest for a minimum of 30 minutes.
When it's time to roll, lightly flour your bench. Divide your dough into quarters, you'll have 2 bottoms and 2 tops or you can cut it just in half if you're making 1 large tray.
Begin to press down with your hands to flatten and give your dough its round shape. You can use your hands to stretch it out or a rolling pin, you want it paper thin.
Oil your tray and place down the base layer of dough, then scoop on big spoonfuls of fresh Stracciatella Cheese - half the cheese per Focaccia.
Place on the top layer of dough and cut off any excess that is hanging off the sides, you can then fold the edges in.
Drizzle a little oil on top and spread it with your hands or a pastry brush, then pinch a few holes and add a sprinkling of salt.
Put your tray in the oven, the Focaccia should take between 6-8 minutes to cook, it should be golden and crispy on top and bottom.
Cut it up and eat immediately.
