Fluffy Buttermilk Pancakes with Maple Bananas


Ingredients

1 Cup Self Raising Flour

1/2 Tsp Baking Powder

1 Egg

1 Cup Of Buttermilk Or (make your own with Milk + Few Drops Of White Vinegar or 1/4 Lemon)

1 Tablespoon Of Maple Syrup

Tiny Pinch Of Salt


Maple Bananas

Banana

Maple Syrup

Raw Sugar

Butter




Method

To make your buttermilk, add milk to a bowl and add in the lemon/vinegar. Let it sit for a few minutes and it will begin to curdle and give you instant buttermilk.


You can add all the ingredients into your blender and in 3 seconds the batter will be done, or you can mix it in a bowl till smooth - I mix the wet ingredients together and then add in the dry.


You can let the mixture sit for a bit which will make the batter lighter, but this is optional.

Add a little oil/butter to a pan and wipe the excess with a paper towel. Cook till lots of little bubbles appear on the surface and then flip them, cook for a minute or until golden brown.

For the maple bananas I slice a banana and add it to the pan with a tiny piece of butter, a drizzle or maple syrup and a sprinkle of raw sugar, the sugars will cook and caramelize, and your bananas will get a toffee glaze.


If you want your pieces of banana to stay intact cut your slices fairly thick, if you don’t care like me and prefer it to be saucier just mix them around, they’ll begin to break up.


I cooked them for a few minutes then put them in a bowl with another drizzle of maple syrup.

My Tip: You can add nuts like pecans, walnuts etc
