Ingredients
1 Small Iceberg Lettuce
1 Cucumber
1 Tomato
1 Sweet Long Pepper (Red or Green)
4 Radishes
2 Spring onions
Feta (Optional)
Fresh Parsley
Pita Chips *
Dressing
Sprinkle of Sumac
1 Lemon
1 - 2 Tbsp EVOO
Salt
Method
Chop up your ingredients as small as you like and add them to a bowl - I like to use my mandolin for the radishes so they're flavour isn't as strong for picky eaters, plus they look pretty.
To make the pita chips I cut up a piece of Lebanese pita and put them in a bowl with a bit of water, a drizzle of olive oil and a sprinkle of salt. I put them in my preheated Air Fryer at 210°c for 6-7 minutes till they're golden brown. The reason I add the water is to hydrate them, this makes the final product more or a deep fried chip than toasted. If you dont have an AF you can fry them in oil till crispy and then sprinkle them with salt.
Add them to the salad bowl once you're ready to dress it.
To make the dressing add the ingredients into a jar, give it a shake, pour it over your salad and toss it all together.
