Fancy 5 Minute Beans


Ingredients

Green Beans

Whole Grain Mustard

White Wine Vinegar

Red Onion

Feta (Persian, Marinated, Plain, Goats Cheese etc)

EV Olive Oil

Salt




Method

Cut the stems off the beans and blanch them in a pot of lightly salted water for 2 minutes.


Finely slice a little bit a red onion and rinse it under water, this will remove the harshness of the onion so its not so overpowering. Add them to your serving bowl with a drizzle of olive oil, vinegar, a teaspoon of mustard and a sprinkle of salt.


Drain your beans and add them to the bowl, mix and coat them with the dressing. You can add feta to the mixture, crumble it on top or leave it out completely.


This dish is best served cool so refrigerate till you're ready.
