Ingredients
3 Cups Of Cooked Rice - Short, Medium Grain Or Arborio 1/2 - 1 Cup Of Mozzarella - Grated Or Finely Diced 1/3 - 1/2 Cup Or Parmasen - Grated Small Handful Of Parsley - Finely Chopped (optional) 1 Egg 1 Cup Of Breadcrumbs S&P
Method In a bowl combine the rice, cheeses, parsley, egg and s&p.
Using your hands shape the rice mixture into balls, i make mine into flattish ovals which just make them easier to cook.
Then roll them in breadcrumbs and place them on a tray, you can fry them immediately or put them in the fridge till you're ready to go, this will firm them up which is better anyways. To cook them add a fingers width of oil into a pan, once the oil's hot enough add the Arancini, don't overcrowd the pan.
Cook them for a few minutes on each side and they're golden brown. Enjoy x
