Makes 28 Small Pies
Ingredients
3 cups of Plain Flour *Tip below if you want them to be puffy.
1 1/2 cups Greek/Natural Yoghurt
Sprinkle of salt
225g Halloumi
EV Olive Oil
Method
Preheat your oven to 220°c or air fryer to 210°c.
In a bowl mix together the Flour, Yoghurt and salt. Use your hands to knead it for a few minutes till it's nice and smooth, then cut them it into portions.
This dough doesn't need to rest so you can use it straight away.
Grate the halloumi using the coarse side of your grater.
Roll each piece into a ball and place it in between 2 sheets of baking paper or you can use a sandwhich bag that you've cut down the sides. You can also do it on a floured bench if you prefer.
Use a rolling pin or tortilla press to flatten them into a circle, about 3 mm thick.
Add a bit of halloumi in the centre and fold the dough over, you can either just press the edges together or try a fancy crimp, whatever you can manage is fine.
Place them on a lined baking tray and give them a light brush of oil.
Place them in the oven, they will cook in about 10 - 15 minutes (air fryer 8 - 10), obviously this depends on how big you make them and your oven.
They should have a beautifully golden brown base and a speckled top when they're ready.

My Tip: You can fill them with whatever flavours you like, a spiced mince, ham + cheese, ricotta or even something sweet! If you're making sweet ones use a neutral oil.
If you prefer them to be more puffy like I do, use SR Flour and preheat your oven to 250°c and cook them for about 8 minutes.
