Cheats Dutch Pancakes

Makes about 40



Ingredients

1 Cup Self Raising Flour

1/2 Tsp Baking Powder

1 Egg

1 Cup Of Buttermilk (or make your own with Milk + Few Drops Of White Vinegar or 1/4 Lemon)

1 Tablespoon Of Maple Syrup or 1 tsp of Sugar

Tiny Pinch Of Salt

20g melted Butter - Optional (see note)



Method

To make your buttermilk, add milk to a bowl and add in the lemon/vinegar. Let it sit for a few minutes and it will begin to curdle and give you instant buttermilk.

You can add all the ingredients into your blender and in 3 seconds the batter will be done, or you can mix it in a bowl till smooth - I mix the wet ingredients together and then add in the dry.


You can let the mixture sit for a bit which will make the batter lighter, but this is optional.

Add a little butter to a pan and wipe the excess with a paper towel. Cook till lots of little bubbles appear on the surface and then flip them, then cook for a minute or until golden brown. I found that using a wooden skewer to turn them was easier than a spatula and this also meant I didn't have to let the pancakes fully set of the first side and I could turn them when they we're a little runny.


Serve with whatever toppings your like, Nutella + strawberries, lemon + sugar, jam etc. Just remember to generously dust them with icing sugar and eat them with a tooth pick, just like at the markets!

My Tip: In the video I recorded I didn't add butter to the mixture but in my second batch I did and I preferred the taste, you can choose if you add it or not, they will work either way.
