Cheats Braided Scroll Loaf


Ingredients

1.5 (up to 2) cups SR Flour (or 1.5 Plain Flour + 3 tsp Baking Powder)

1 cup Natural Yoghurt

1 tbsp EV Olive Oil

Sprinkle of Salt


Method

Preheat your oven to 190°c.


Use a spoon to combine all the ingredients in a bowl till it all comes together.


I then use my hands to knead it for a few minutes till it becomes a smooth ball, this also allows me to see how sticky it is and if needs a little more flour. All yoghurts are different so you may need more flour if it's not as thick as the one I used.


Feel free to use a stand mixer, but it's honestly so easy!

Place the dough between 2 sheets of baking paper or straight onto your floured bench and roll it into a rectangle.


The dough should be about 3-5 mm thick.


If you want it to be a high loaf then you want to roll it landscape so it's thicker and gives the loaf some height, if you just want to just make a braided scroll you can make it longer and not as thick.


Remove the paper and top it with whatever you like, for the pizza one I put napoli sauce, ham and provolone cheese. For the sweet one I used nutella and handful frozen blueberries.


Then roll it into a log and using a sharp knife you want to cut down the centre leaving about 1cm connected at the top.


Grab the 2 pieces and twist them around each other to create a braid - it's pretty much left, right, left, right and then pinch the end.


Place it on a lined tray or in a lined loaf tin and drizzle the top with a some oil (savoury) or a few little pieces of butter (sweet).


Put it into the oven and cook it for 25 - 35 minutes depending on your oven. The base and top should be golden brown.

My Tip: I used this amount to make both pictured scrolls.

You can also make this with frozen Puff Pastry - I would probably cook it at 200°c for about 20 minutes.
